Spiced sweet potato wedges

Ingredients

  1. Step 1 2 tsp ground cumin
  2. Step 2 2 tsp chilli flakes
  3. Step 3 2 tsp sumac
  4. Step 4 2 tbsp thyme leaves, roughly chopped
  5. Step 5 2 tbsp rosemary leaves, roughly chopped
  6. Step 6 3 garlic cloves
  7. Step 7 zest and juice 1 lemon
  8. Step 8 3 tbsp olive oil
  9. Step 9 1 ¼kg sweet potatoes, cut into wedges

Directions

  1. Step 1 Heat oven to 200C/180C fan/gas 6. Using a pestle and mortar, bash together the spices, herbs, garlic and some seasoning.
  2. Step 2 Spoon into a large bowl and stir in the lemon zest and juice, and the oil. Add the potatoes and toss together. Arrange, skin-side down, on 2 baking trays and bake for 30-40 mins until soft inside and crisp on the outside.
