Mincemeat & cheese toasties

- Step 1 100g mature cheddar , grated
- Step 2 2 heaped tbsp mincemeat (check the label if you're vegetarian)
- Step 3 3 spring onions , sliced
- Step 4 4 slices sourdough
- Step 5 4 tsp mayonnaise

Directions
- Step 1 Mix the cheese with the mincemeat and spring onions. Spread each sourdough slice with 1 tsp of the mayonnaise. Put two of the slices mayo-side down on a board and spread the other side with the cheese mixture. Sandwich with the other slices so the mayonnaise is on the outside.
- Step 2 Heat a large non-stick frying pan over a medium heat. When hot, fry the toasties for 3-4 mins on each side, weighing them down with a heavy-based pan until crisp and golden and the cheese is melted. Cut in half and serve.
