Healthy carrot soup

Ingredients

  1. Step 1 3 large carrots
  2. Step 2 1 tbsp grated ginger
  3. Step 3 1 tsp turmeric
  4. Step 4 a pinch of cayenne pepper , plus extra to serve
  5. Step 5 20g wholemeal bread
  6. Step 6 1 tbsp soured cream , plus extra to serve
  7. Step 7 200ml vegetable stock

Directions

  1. Step 1 Peel and chop the carrots and put in a blender with the ginger, turmeric, cayenne pepper, wholemeal bread, soured cream and vegetable stock. Blitz until smooth. Heat until piping hot. Swirl through some extra soured cream, or a sprinkling of cayenne, if you like.
