Easy BBQ beans

Ingredients

  1. Step 1 1 tbsp olive oil
  2. Step 2 1 onion , thinly sliced
  3. Step 3 2 garlic cloves , chopped
  4. Step 4 1 tbsp white or red wine vinegar
  5. Step 5 1 heaped tbsp soft brown sugar
  6. Step 6 400g tin pinto beans , drained and rinsed
  7. Step 7 400ml tub passata
  8. Step 8 1 tsp Worcestershire sauce or vegetarian alternative (optional)
  9. Step 9 small bunch coriander , chopped

Directions

  1. Step 1 Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.
